A MODERN VISION OF FRENCH CUISINE

Chef David Chaymol discovered his passion for cooking at the age of 14 and continued his training until he was 20. He worked in renowned restaurants in Europe, including the Pullman Hotel in Lyon and the prestigious Léon de Lyon (two Michelin stars) under the direction of Jean-Paul Lacombe.

His career led him to travel and gain experience in various places: he was Chef de Partie at the Casablanca Hotel in Anguilla, worked on the sailboats of the French company Stardust and in Los Angeles at Mediterranean restaurants such as L’Orangerie. He returned to France to work at La Rotonde (Casino Lyon Vert, two Michelin stars) with chefs Philippe Gauvreau and Jacques Maximin.

Later, he embarked as a chef on luxury yachts, sailing in the Caribbean, Florida, Bahamas, Belize and Turkey. In 2000, he opened Bistro de Paris in Miramar, Puerto Rico, which he later moved across the street from the Museo de Arte de Puerto Rico in 2007, operating it for 14 years.

Between 2008 and 2010, he was Executive Chef at Café La Plage, playing a key role in its culinary direction. Subsequently, between 2014 and 2015, he worked as a gastronomic consultant for Café La Plage and Art D’Chocolat, contributing to the development of their gastronomic concepts.

In 2015, he created the Chef Table concept at Niche Bistro, a restaurant featuring classic French cuisine with local ingredients. Niche Bistro, the smallest restaurant in San Juan, reached the number 1 spot on OpenTable and TripAdvisor, establishing itself as a benchmark for fine dining on the island.

Recent Trajectory and Future Projects

In recent years, Chef Chaymol has worked in high-end private events in Puerto Rico, attending weddings, corporate events and social celebrations with canapés menus, sit-down dinners, BBQ and exclusive buffets.

Chef Chaymol is currently running a gastronomic consultancy in Tortola, bringing his expertise in the creation and optimization of culinary concepts on the island.

In 2025, together with his partner Paco López, he will open the Bardot restaurant in Condado, inside the Hotel O:live. In addition, they will launch C’la Vie, an exclusive rooftop in the same location, expanding their gastronomic and entertainment proposal.
